What's for Dinner 3/31/22

 Hello All,

The dampness is beginning to creep in - rain in the forecast by this afternoon.  But...it is 48 this morning which is more than 20 degrees warmer than yesterday morning!  And tomorrow is April 1st!  I cut a bunch of daffodils and some grape hyacinths for kitchen bouquets - some on the counter, some on the buffet, some on the windowsill.  I love the pops of color.  I also bought a large bunch of flowers at Trader Joe's yesterday.


Hard to really appreciate them in a small picture, but click to enlarge if so inclined.  The purple ones (two shades) are Wax Flowers.  The white ones are something else, but of course I cannot remember the name.

There were more folks in the office yesterday, but I was only there less than an hour!  Our entire purchasing department was in for an in-person meeting.  The first time those 5 people were together in over 2 years!  My accountant for Kevin's group came in just as I was leaving.  I hadn't seen her in a year or so.  I do not get the impression that anyone is thinking of going back to the office full time.

The other night I got a hankering for something different.  Decades ago I would cook pork chops with a chili sauce over them.  I decided to do that again...boneless, loin pork chops in the bottom of a casserole dish.  Then I mixed a cup of chili sauce with some white vinegar, brown sugar and Worcestershire sauce and poured that over the chops.  Popped the casserole dish into the oven at 350 for about 45 minutes and they turned out great.  To go with them, I made Smothered Cabbage.


I used just part of a giant sweet onion, about 2/3 of a small head of cabbage, 2 potatoes and about 1 cup of broth.  We still have a large container left over.  This dish cooks up quickly and was very tasty alongside the chops.

You all know I'm not much of a TV or movie person, but last night we watched The Starling and both enjoyed it.  Melissa McCarthy is pretty funny.

I'm looking forward to my appointment this afternoon with the neuro surgeon.  Again, I am not expecting or wanting any kind of surgery...rather I want to find out what I can and cannot do (or should and should not).  Looking for good news all around.

Well, time to pour another cup of coffee, dry my hair, and get started on my usual Thursday morning reports.  Happy Friday Eve!!

  1. It got to be nearly 60 degrees yesterday evening . . . today it is raining and really windy (like freak-the-dogs-out windy) with SNOW on the way. Yippee. I can't WAIT to be able to bring in daffodils and grape hyacinths from my garden. For now, I will wait patiently. ;-)

  2. My weather says it's supposed to get to almost 70 today, but then back to the normal 50s and 30s. Tomorrow also looks really windy, so it might be a good day for pork chops in the oven. I don't like grilling when there are 20-30 mph winds so thank you for the recipe and for giving me an idea for dinner!

  4. It almost reached 70 here yesterday... crazy since the day started with mixed precipitation... freezing rain and snow. Today we have rain and high winds... so March is absolutely roaring on her way out!

    I am going to share that recipe with Steve's mom... they eat cabbage all the time!

  5. Still crazy windy today, but warmer - supposed to get almost to 60!
    And then tomorrow, snow... Can't win!

    I think those white flowers are maybe Baby's Breath?
    No outside flowers for me yet, but soon!

    I'm pretty sure my Mom had that recipe, or something similar. She used to make her own chili sauce too. Dad loved chili sauce with steak. She stopped making it when Dad was diagnosed diabetic, because her sauce recipe had a fair amount of sugar.

  6. It was 76 back home yesterday -- just two days after it snowed! This roller-coaster of weather is not at all to my liking.

    The Starling sounds very much like something I'd enjoy, so thanks for the recommendation. Fingers crossed that all goes well at your appointment today! I hope you'll update us tomorrow.

  7. High winds today and suddenly, it's pouring down rain. This rollercoaster weather literally exhausts me. My meds keep migraines from fully blooming, but the attendant fatigue occurs nonetheless as part of the process.

    I have a similar recipe--braised cabbage--and it's so comforting. Thanks for reminding me of it. I am a fan of cabbage.

    My daffodils are starting to produce some shy buds. I feel encouraged! It will be nice to see some flowers outside for once.

  8. Fingers crossed for a good appointment today.
    In our old house in Eugene, I had planted about a gazillion grape hyacinths and they naturalized all over the neighborhood. I kind of miss them!

  9. Val is correct,the white flowers are Baby’s Breath. They are a good filler for bouquets and used to grow wild near my childhood home - florists as far away as Denver would come and harvest it. I enjoyed the Starling, as well.

  10. We woke up to two inches of snow. In like a lamb, out like a lion is definitely true for March this year. Howling wind and COLD. It is supposed to be mid-forties this afternoon so it will melt.
    Your flowers are all pretty but we obvously have nothing yet.
    I think a lot of people will never work in an office again. Remote costs the companies a lot less too.

  11. I'm hoping for warmer weather today. It's been too darn cold. Your flowers are lovely. I feel cheated out of spring because everything blossomed during the cold spell. We'll have a green Easter this year I suppose. I think the cherry blossoms are doing their thing already too. Crazy.

  14. Hope all went well at the neurosurgeon and that you can get back to doing all the things you want to do.

    I make something very similar with cabbage, but instead of potatoes we use pierogies.
