What's for Dinner?

 Good Morning!

Well, the heat is on in the house.  Yesterday it was 63 when I got up but by Noon the temps had started to plummet and it is around freezing now.  Luckily no snow like some of you poor unfortunate ones have gotten.

No further side effects from the second jab and my arm is no longer sore.  I slept like a rock last night and am up early on Thursday to run my usual Thursday reports.  Before I get into work, though, I thought I would do a post.

It may be chilly outside, but before we know it the warm/hot temps will be upon us.  So this week I have a couple more salads to share with you.  First up is the Marinated Eggplant dish I made last Saturday when Colin & Mailing were over.  I have been making this for years and it is just so good.  I hope you enjoy.



Next up is a lentil salad that I just made for the first time this week.  If I remember correctly, the recipe came from an Eating Well magazine.  This was really good and there were (actually still are) leftovers.  Lentils are very high in protein.


Time to get some more coffee and start in on my work day.  Hoping your week has been going well - enjoy the wind down to the weekend!

  1. Mmm ... delicious salads! I really love pecans, mint, and red wine vinegar, so I'll be making the lentil one soon. I hardly ever make eggplant in any form, so I'll have to give that one a try, too. Thanks for the recipes, Vera!

  2. Those sound like great salads, Vera! I have a hard time getting Tom to enjoy eggplant, but he might really go for the marinara recipe. The lentils would be a big hit for both of us. Thanks so much for sharing.

  4. Both recipes sound good. The weather seems to be craziness everywhere. It was 28 here last night. BRRRR. Supposedly the last freeze of the season. We shall see. Have a wonderful day Vera.

  5. It did get cold didn't it? Brrr....it feels like February out there today. My poor little plants must be freezing.
    I eat a lot of lentils-all the different colored ones. I never tried them in a salad. I'll have to try that.

  6. We got snow yesterday (you'll see pics in my garden post on Saturday). Its melted but it's still cold.
    We have electric baseboard heat, so I'm being stingy. I have it on downstairs, but no where else! At night I just pile on more blankets!

    Your salads sound yummy, I love eggplant. I wish my hubby liked salads, I have to encourage him to eat any veggie. We had a little snow shower, it did not stick. It is very cold and windy. Take care, enjoy your day!

  9. I love radishes and I almost never buy them. I saw a recipe for roasted radishes and I must make that one of these days!
