What's For Dinner?

 Good Morning!

It's a little later than I normally post, but I had an early eye doctor appointment this morning.  I'm still a bit blurry after the drops, but that should wear off in a bit.  My eyes have gotten worse and, specifically, my cataracts are much worse and it's time to have surgery.  I was hoping to last another year of so without have them done, but no such luck.  The doctor in the practice I see has cut back on her hours and she no longer does surgery, so the doctor who did Fletcher's cataract surgery will do mine also.  I have an appointment with her in June and at that time my first surgery will be scheduled.  I'm not looking forward to the surgery, but I sure am looking forward to seeing better!

Meanwhile, it's Thursday, so let's talk food.  Tonight I am making "Ellen's Pork Chops" for dinner.  Named after my Aunt Ellen in Vermont (my Dad's older sister) who usually made these at some point when we visited her.  These are quick to pull together and the baking time allows the maker to relax a bit and do some knitting or reading or whatever!

Ellen’s Pork Chops

 Place pork chops in lightly greased casserole dish.  You can use any type of chops – I prefer thick cut boneless chops and I do trim any fat off.

 Place a slice of onion and a slice of tomato on top of each chop.  I typically also add sliced fresh mushrooms.

 Mix up some stuffing – any kind will do – I usually have a bag of Pepperidge Farm Herb stuffing on hand.  Spoon stuffing on top of chops and bake at (approx..) 365 for (approx…) an hour.  Temp and time can vary depending on whether or not you are cooking anything else in the oven and need a different temperature.

 Cooked this way, the chops stay moist and good!

I like the fact that this recipe includes a meat, some veggies and a starch in one dish.  I always add another vegetable side dish, but it makes for an easy and quick dinner.

Well, it's Thursday and I have a bunch of reports to do and send out.  Hopefully I can see spreadsheets well enough to work on them!  Hope your week is going well.  I'm enjoying winding down to the weekend.  Colin & Mailing will be over on Saturday for dinner.

  1. Sorry to hear about your cataracts, but at least you will have had both of your shots, and it will be wonderful to see better. Thanks for Ellen's pork chops! I don't make pork chops very often because it seems like they often end up too dry for me, but these sound delicious, especially with thick cut chops. I love things that are one-dish meals so I'll be making these soon.

  2. I had a consult with an ophthalmologist last week - cataract surgery scheduled for May 18th. The other eye will be done in June. Like you, I’m looking forward to seeing better.

  3. It's a shame about your eyes. I need to get mine checked as soon as we get the all clear. I can't see a thing anymore.
    That's a great recipe that I will have to write down. The Mister loves pork chops. As soon as he is able to shop for himself again I just know he's going to bring a bunch home. He always did whenever I asked him to pick up something for dinner. Now I'll have something interesting to do with them. I never had a clue other than just bake them.

  4. Ugh, my eyesight getting worse is one of few things I do not like about getting older, and I can only imagine how difficult cataracts must make things. But it's pretty amazing that they can remove them, and while the surgery is likely to be not so fun, imagine how much better everything will look afterwards!

  7. Had my cataracts removed in January and it was life changing! The drops routine was a pain, but totally worth it. No contacs and no glasses. Been wearing glasses since I was 8 and contacs since I was 16.

  8. Like everyone else I'm sorry about your cataract surgery but everyone that I know that has had it has been very, very happy with the results. My eye doctor told me last year that I have the beginnings of cataracts so we just have to watch them. I had to take Mom to the eye doctors today and her eye has improved since she left the hospital. They have no idea why the infection and vaccine affected her one good eye, but it did. She's blind in her left eye from a stroke some thirty-odd years ago so it's important to keep the other eye as healthy as possible as she loves to read.
    I'm making pork chops for her and I tomorrow night. She has asked me to steam them with Lawry's seasoning salt and then have mashed potatoes and gravy. Yum.

  9. I have had cataract surgery on both eyes and it went very well. It was relatively painless. I was amazed at how much brighter the world looked through those new eyes.

  10. Sorry, you need the cataract surgery. I know a lot people lately who have had to have the surgery. Your pork chop meal sounds delicious. I do not make stuffing very often. Have a great day and a happy weekend!

  11. I go to an eye check up next week. Dr suggests cataract surgery for me this year, too. Ok, you go first and pave the way for me! The recipe sounds delicious!

  13. What a great recipe, Vera! Thanks for sharing it. It seems like it would offer a great "canvas" for lots of creativity, too. Sorry about the cataract surgery . . . but just think how wonderful it will be for you to see WELL again! XO
