What's For Dinner?

 Hello and Good Morning!

It's a bit chillier out today...low 40's this a.m.  Fletch said his chin was cold when he walked last night (he sports a beard in the winter months, but recently shaved it off for the summer).

Yesterday ended up being a busier day than I expected or wanted.  I did manage to do a little stitching and a little reading, but no knitting.  Not good...hoping to remedy that today.  It's already been quite a busy morning workwise though, so we shall see.

Has anyone watched the new series on Netflix "Life in Color" with David Attenborough?  It's quite good - only 3 episodes and we finished watching it last night.

Well, as I mentioned, I completely forgot it was Cinco de Mayo yesterday, so no Mexican food for us.  I had taken salmon out of the freezer, so that's what we had.  One of our favorite ways to have it is:


A very simple recipe, but quite tasty.  You can up the heat or decrease depending on what you like.  Last night I did not broil it, but baked it at 425 because I had "tater tots" in the oven to go with (I prefer fries, but Fletch loves his tater tots - lol).  That and some riced cauliflower with zucchini, peppers and some spices rounded out the meal.  It was a little bland looking (all brown and white), but it did taste good!

I'm off to pour some more coffee, make the bed and (hopefully) do something - anything - on the personal side rather than work!  Hope your Thursday is a good one.

  1. I also don't like it when a meal is all one colour. Is that from old school home ec classes? Should I start garnishing or something? LOL

  2. I have lots of salmon in the freezer thanks to Justin's fishing trip to upstate NY last fall, so I will give this a try. I'm getting tired of lemon juice and seasoned salt!

    I did watch the new David Attenborough and wished there were more episodes. Hope you can fit in some personal time today!

    We are meeting friends tomorrow at The Cantina in Bristol. I guess we are doing Siete de Mayo.

  4. I sure hope your work day isn't as busy as yesterday. We have a busy day planned. The visiting nurse will be at Mom's soon. I have my sheets in the machine so I'm hoping they finish before she gets here. Then we'll go to the grocery store. I'm picking Piper up after school and Mandy will come mow after work. The grass is growing so fast she wants to mow it twice a week for now. It was 8 inches long on Saturday and it's too hard to mow that long. Tonight my nephew is coming with a pickup to pick up some junk. I'll try to write a blog post about that tonight. I guess it's no wonder I'm not getting a lot of knitting done is it?

  5. Yum, that sounds like a good salmon recipe! We might be making it this weekend -- we're having my in-laws over for dinner on Saturday night for Mother's Day, and they're big salmon eaters, so I'll keep this recipe in mind.

    Thanks for the tip about the Netflix show; I'm always happy to get a recommendation. I've just started watching the short series on the robbery at the Isabella Stewart Gardner Museum.
