Weekending

 Hello!

How was your weekend?  Good, I hope.  Mine was good.  Nothing out of the ordinary and nothing spectacular, but that's fine with me.  Saturday I met up with Dee for some coffee, knitting and catch-up chatting.  That felt good (especially after a very long work day on Friday).  Fletch grilled some chicken for dinner and I made some spicy yellow rice and a garden salad of green beans, onions and tomatoes with a drizzle of EVOO and a bunch of basil.

Saturday's weather was just so nice.  Sunday we woke up to a bit of rain and had rain on and off all day.  We got the grocery shopping done and I managed to wash and dry two loads of laundry.  Fletch loves fried mushrooms and I hate frying any food.  So...I went ahead and ordered an air fryer.  I made the mushrooms for dinner on Sunday to go with some fresh bruschetta.  The shrooms turned out great!  I cannot wait to try other things - winter squash, Brussels sprouts, etc.  Deb posted last week about making fried green tomatoes - YUM!


So, a new toy to have some fun with and experiment a bit.

I did a very little bit of stitching and knitting over the weekend.  My eyes seemed to be tired a lot and, of course, if doesn't help not having the correct prescription for my left eye yet.

This is shaping up to be a very busy week.  I now have to go to the office both today and tomorrow.  What's up with that?  I need to meet with Bruce this morning and then tomorrow a bunch of folks will be in for panel interviews to replace Bill on the West Coast.  I'm hoping that I'm just in for 2-3 hours each morning, but time will tell.  And then Wednesday the right eye gets done!  WooHoo, I really cannot wait for that and then getting updated glasses.

Looks like today will be a pretty one.  A bit chilly this early a.m. (54 or so) but it felt so good to sleep (very well, thank you!) with no AC and not even the ceiling fan.  Just the windows wide open.  I did notice that bird song is happening a bit later in the morning than a month ago.  And early Sunday morning (like 4 a.m.) Fletch and I both heard an owl in our woods!

Time to rally and get ready for the day.  Here's to a great week ahead!

  1. I'm glad your air fryer has been a good purchase. I thought about getting one as I also hate frying foods (the house smells for days), but the capacity seemed small, and it was a bit expensive. I ended up getting a regular oil fryer and I use it outdoors. I hope your days in the office are short ones!

  5. When things settle down, I want to get an air fryer. Mom and Dad love their's. I found one that is a toaster oven/air fryer combo. DAve's wanted a toaster oven forever (we never had enough counter space)

  8. It has been nice sleeping with the windows open. I had a bird making a racket at about 5 am this morning. It was still pretty dark so I'm not sure what was up with that. It was good to get up early though since it was finally cool enough to have a hot cup of coffee and some oatmeal.

  9. Hooray for open windows! We're enjoying that phenomenon here, too.

    I'm resisting both the instant pot and the air fryer trends. I simply don't have the room for more kitchen stuff. That, and we're both getting so bored with meals lately. I'll be reading how much you like and use yours.

  10. It was decidedly cool here yesterday evening and this morning -- it made for a really lovely walk this morning! I am not ready for summer to be over, but I do like the little preview of fall weather.

    I hope the busy part of the week flies by and then you can focus on resting after the second eye is done!

  11. We have an airfryer that is built in to the toaster over and I love it so so so so much. I want to air fry everything. And I pretty much do.

  14. You are a good cook. Isn't it great to use all the fresh produce of the summer? Meals just seem easier and better in the summer.
