Weekending 7/6/26

 Good Morning All,

How are you and how was your 4th of July?  The weather...so freakin' oppressive.  I pretty much had a feeling of lassitude ALL weekend.  It was hard to settle to do anything.  Nothing appealed.  I did not want to stitch, I did not want to knit, I didn't even really feel like reading much.  I did cook though.  Go figure...when the temps are over 100 I end up baking cookies!

We went to Zhongren's house Friday for dinner and he asked that we bring cookies.  So, I made a bar cookie using oatmeal, pumpkin and peanut butter.  I forgot to take a picture.  Once cooked and then cooled, a thin layer of chocolate is spread on the top.  They were good.  I also made basil lime shortbread cookies.


Who doesn't love a shortbread cookie?  Well, Fletch is not that fond of them...  These have fresh chopped basil and lime zest in them.  YUM!!!  The best part was watching Iris walk around with an ear of corn that she would gnaw on - too cute.

Saturday we ended up at Colin & Mailing's for dinner.  Colin grilled and I made a corn and black bean salad.  There was also an avocado and cucumber salad and Colin baked a fresh cherry pie.  Oh my!  

Finally after we got home on Saturday, the winds picked up (a lot) and then the rain came.  We only got about half an inch, but it cooled things off a bit and we ended up getting another inch or so last night.  The garden is happy.

The feeling of ennui is still with me somewhat.  I can't settle on any one thing to do or make.  I'm sure that will change in a bit (fingers crossed), but first I'm heading out later to watch Iris.  Luckily it looks like a rainy day with cooler temps.  I hope your Monday finds you doing something fun!

  1. This weather... I am absolutely over it! I had much the same (sans baking) weekend as you. I made burgers on Saturday (they were great!) and I made some homemade vanilla/brown sugar ice cream! It was so good! This humidity is just miserable! (as are the mosquitoes! grrr!)

  2. It is really hard to feel like doing anything when it's so hot and humid. We got some rain late in the day on the 4th and it was amazing how much it did to cool things down -- like 20 degrees! I hope we're at the end of this heat dome now. Your desserts sound amazing.

  3. I feel terrible that although I am in 74 degrees of blissful AC I still don't have the will to live. It feels like something is pressing down on you. I need a breath of fresh air.

  4. yum yum yum! It was a rotten weather weekend. Yesterday the rain finally came and it was nice to listen to thunder and raindrops! Something different.

  5. I was glad to wake up today and realize that it wasn't going to be another blazing hot, oppressive day. It's gray, cool, and drizzly, but I'll take that weather any day over 104 and humid. We got lots of wind, rain, and storms over the weekend and were lucky that we didn't lose power. I don't think I would have thought to put basil and lime together, but it certainly sounds like a delicious combination!

  6. I begin to wonder if the heat isn't responsible for the ennui. I find it hard to settle to anything when the weather is hot and humid. Your cookies sound and look delicious.
