Weekending 6/2/25

 Hello and Good Morning!

And hello to June!  May certainly flew by - mostly with rain and winds.  Yes, we had more rain on Friday night and into Saturday and fairly strong winds as well.  And then more rain Saturday night.


We had a delicious dinner Saturday night at Colin & Mailing's.  Colin fixed the BEST beer battered cod I have ever had!  It was almost like a tempura batter.  And home-made steak fries and coleslaw rounded out the meal.  The peach upside down cake turned out well.  THIS is the recipe I used.  My peaches were a little on the firm side, but it still came out tasty.  I think this recipe would work well with any stone fruit - plums, apricots, or even a mixture.

Sunday was filled with chores.  Laundry, cleaning bathrooms, scrubbing the kitchen floor, paying bills, dropping off a donation at the local food pantry, picking up prescriptions, etc., etc.  But, I managed to get everything done that I wanted to, so that was good.  I would have liked more time for relaxing with knitting and/or stitching, but c'est la vie.

  1. I, likewise, got a jump start on laundry this weekend! And I spent a bit of time in the garden... appreciating the cooler weather when I was finished and not all hot and sweaty! LOL Happy Monday!

  2. Mmm, that cake sounds so good! I'm going to bookmark the recipe -- it will be great when all the stone fruits are plentiful! Somehow I seem to get more of the relaxing stuff (reading, knitting) done during the week when I'm supposedly busier and end up doing all the not-fun stuff on the weekend. I guess the nice thing for you is that every day is the weekend!

  3. I took a walk and it was the first one in ages since I was avoiding tree pollen breathing. The fish dinner sounds good. I hope to walk today as well!

  4. Forgive me--when I first looked at the pic of the upside down cake, I thought it was a brain photo; you can tell I have medical things on my mind! The meal and time with your family sounds wonderful!

  5. Your cake looks delicious and I like the idea of making it with different fruits. You got so much done on Sunday that I think you should definitely take time this week to stitch and knit!

  8. The dinner sounds so good and the cake looks delicious. I ate too much this weekend. You know how funerals are. Everyone brings food and a lot of it consists of things you don't make at home so you have to try everything. Then all of the leftovers were sent home to feed the family! It's been an emotional weekend but Dennis's brother and his girlfriend just left about 10 minutes ago so it will get a bit quieter now.

  12. We bought peaches from the peach truck several years ago and they had bad year because they were terrible. Prepared them for freezer but they turned dark brown, not appetizing at all!! Yours looks darn good. Beer battered fish sounds good too.
